Crispy Coconut Popcorn Shrimp:
Just a cheeky little summer recipe using Mojo Picón Mango & Habanero. crispy coconut popcorn shrimp, with blowtorched Mango & Habanero Mojo.
- Tiger Prawns.
- grated coconut.
- 2 beaten eggs
- 1 Mango.
- Fresh Coriander.
- Coat tiger prawns in half flour and half dedicated coconut.
- Then into egg wash, then into breadcrumbs.
- Fry until golden.
- Peel and cut a mango into chunks then lightly blowtorch or grill to release the sweetness.
- Garnish with fresh coriander and serve with Mojo Picon Mango & Habanero.
