Crispy Coconut Popcorn Shrimp:

Just a cheeky little summer recipe using Mojo Picón Mango & Habanero. crispy coconut popcorn shrimp, with blowtorched Mango & Habanero Mojo.

Ingredients:

  • Tiger Prawns.
  • Flour
  • grated coconut.
  • 2 beaten eggs
  • breadcrumbs.
  • 1 Mango.
  • Fresh Coriander.
Method:
  1. Coat tiger prawns in half flour and half dedicated coconut.
  2. Then into egg wash, then into breadcrumbs.
  3. Fry until golden.
  4. Peel and cut a mango into chunks then lightly blowtorch or grill to release the sweetness.
  5. Garnish with fresh coriander and serve with Mojo Picon Mango & Habanero.
